Every time I eat Buta Bara Kushiyaki (Japanese grilled pork belly) I always wonder why no one would think about using the same cut for Satay. The problem with Satay nowadays is that they have been cut so small that the meat dries out. How wonderous would a Buta Bara Satay be? The meat would be bouncy and juicy but at the same time have that wonderful Satay marinade that we Singaporeans all love!
That was what I told the people at City Satay and they agreed to develop an Ultimate version of the pork satay for our upcoming hawker fest! I was just there this week to try out version one and it was good!! BUT, we are not done yet. We will still be tweaking it a little more, getting the pineapple pulp ready, getting the peanut sauce more nutty and making sure that it is grilled over charcoal for the Ultimate satay experience!
