My fascination with Pizza started back in 2009 when I first wrote about Vera Pizza Napoletana (VPN) which is considered the true original pizza from Naples. Since then my friend Damien and I have been doing many Pizza experiments at home, trying out different flours, different techniques, testing out different ovens in our attempt to make a pizza at home that is as close to the VPN standards as possible.

Damien went one step further. He quit his job to spend a few months in Italy working for Gaetano Fazia, the Pizza Master who trained two Japanese World Pizza Champions. Since returning from Italy, Damien has set up Peka Pizza doing pop up Pizza parties for functions while he looks for a suitable place to set up a restaurant.

In this very special hands-on Pizza workshop, Damien and I will share with you what we learnt about making handcrafted Pizza from our 3 years of experimentation. VPN pizza actually consists of very simple ingredients. The dough is simply flour, water and salt. The secret lies in how you age, ferment and knead the dough. We will share with you the secrets of making Pizza Dough without commercial yeast, producing a dough that is uniquely Singaporean by harvesting natural yeast from the environment. You will learn about the various ways to bake a pizza at home that looks like its been baked in a wood fired oven. We will also share with you where to get the various equipment and ingredients (cheaply) to make your own VPN pizza at home that will wow your friends!

Finally, if that isn’t enough, you will all get to taste a pizza that is unlike any other in Singapore because Damien will be preparing his three day fermented dough which he has made from an aged mother starter which has yeast harvested locally!
