Quick and simple recipe: Tomato and Eggs

Lots of people have requested quick and simple recipes that they can put together after a hard day’s work! So here is something I often cook when I am tired but still need something yummy to eat with rice – my quick and simple recipe of tomato and eggs!

Ingredients: (For 3-4 persons)

Gp A
Eggs 4
Salt 1/2 tsp
White pepper 1/4 tsp
Water 1 Tbsp

Gp B
Tomatoes 2 medium size (remove skin and cut to wedges)
Sugar 1 Tbsp (adjust to your taste)
Chicken stock 1 tsp dissolved in 1/4 cup water
Optional:
Sesame oil 1/2 tsp
Rice vinegar (if you like it more tart)
Tomato ketchup 1 Tbsp

Method
Beat eggs with water, salt and pepper.  Heat pan till it is hot and add oil.  Once you see wisps of smoke, add the eggs to the pan.  Tilt the pan and use spatula to push the eggs to one side of the pan so that the uncooked eggs will flow down to the hot side of the pan.  Keep doing this until there is no more runny eggs.  Flip over and transfer to a plate.

Next, add the tomatoes and other ingredients to the pan.  Let the tomatoes simmer for a minute or two.  Taste the sauce and make adjustments.  Add the eggs back to the tomato sauce.  Gently cut it up to blocks which you can pick up with chopsticks.  Transfer to a plate and garnish with green onions.

Notes:
1.  Adding a bit of water to the eggs will make them fluffier as the water turns into steam when it heats up.  You can also add 1/4 tsp of baking powder for fluffier eggs.
2.  To remove the skin of the tomatoes, cut a cross hatch at the bottom and place tomatoes in boiling water for 1 min and then cool in room temperature water.  The skin can now be peeled off easily.
