Have you ever thrown away the water in the can of abalone? Don’t! That water has got lots of umami goodness and can be used to turn ordinary chicken wings into a Chinese New Year delicacy!
Here is the recipe!
Ingredients
Mid wings 12
Salt 1 tsp
Abalone 1 can
Ginger 3 slices
Spring onions 4 (white part)
Dark soy sauce 1 tsp
Light soy sauce 2 tsp
Mirin 2 Tbsp
Cognac 3 Tbsp
Cornstarch 1 Tbsp dissolved water
Blanch broccoli in hot water for 2 mins. Remove and soak in cold water and drain. (This will ensure the broccoli is bright green and crunchy!)
Pan fry wings till light brown on both sides, approx 5mins. Add ginger and spring onions and fry briefly. Add 200ml abalone water, 1 tsp dark soya sauce, 2 Tbsp mirin, 2 tsp light soy sauce and simmer for 15mins. Add 3 Tbsp cognac and carefully flambé. (don’t let your hair catch fire!) Once the flames have died down, add the corn starch slurry to thicken the sauce, remove the wings and aside.
Slice the abalone and carefully place in the sauce to warm up. In the meantime, arrange wings and broccoli on plate. Place sliced abalone in the middle of plate, over the stems of the broccoli and pour the sauce over abalone and wings.
