Prawn Omelette Recipe

Prawn omelette is one of those regular household recipes because it uses simple, readily available ingredients, it’s relatively easy to make and and fits right in as one of the medley of dishes that goes with rice!  The trick lies in getting the texture of the prawns right!

Ingredients

Gp A
Prawns medium sized10
Egg white 1
Salt 1/4 tsp
Cornstarch 1 Tbsp

Gp B
Eggs 4
Salt 1/4 tsp
Pepper 1/2 tsp
Green onions 3 (chopped)
Chinese cooking wine 1 Tbsp

Method

1.  Peel and devein prawns and marinade with egg white and salt for an hour.  This will make the prawns more crunchy.
2.  Add cornstarch and mix well before frying.
3.  Beat eggs together with other ingredients
4.  In a hot wok, add oil and fry the prawns till 80% cooked, remove from wok and set aside.
5.  Add eggs to wok and then prawns and fry till eggs are just cooked and a little brown

Notes:

If you can’t get your hands on fresh prawns, you may use frozen prawns but the texture will not be quite the same as they have been treated with chemicals.

In this video, I used tiger prawns.  Other suitable prawns are Ang Kah, Vannamai and green tiger prawns.  For more information on prawns, pls consult the ieat Prawn Files.
